Well, finally I'm feeling much better and had finished all of the canning. I ended up with much less tomato sauce than last year but still I made about 15 jars. I went wild on the chutney though and made 3 different types! I also conserved some organic pears and apricots (when they were in season). I can not wait to open one of them in Christmas. Oops, someone is thinking Christmas already :) For now, I will share with you some photos of the different food I made this summer. All veggies were from my plot and the others, like pasta, cheese, etc, were sourced from local and organic producers. I did not follow any recipe, I just used what I had and all turned delicious :)
Pasta with aubergine and seeds
Potato fritters topped with cheese and tomato sauce then in the oven for few minutes
Crustless, wheat-free potato Quiche (Grate the potato, add some corn flour, oil, a bit of water, mix, then mould into quiche/pie dish, add your desired veggies, add the egg mix (eggs+milk+Salt+some spices), top with cheese and cook in the oven till ready. so yummy and light and addictive :)
Vegetarian Moussaka :) For the yellow to I added a bit of turmeric to the egg mixSalad (fresh tomatoes, garlic, peaches, cooked meglio, parsley, and a fried egg (extra virgin olive oil, salt and vinegar)







Glad to hear you're feeling better now! The food all looks very tasty, as do those grapes in your newer post!
ReplyDeleteThanks Anna, I've been cooking like mad; I guess my accident made me want to enjoy life to the full and one of joys is food. Plus, I have lost a lot of weight, I'm so skinny now and need to fatten up for winter :)
DeleteI wish I can send you some grapes; in the nearby fields there are lots and lots of them; so much I was thinking to turn them into raisins. I made lots of grape juice though :) Next year I will be more prepared and make some raisins
